This recipe is so super easy and quick and you can make it with just about any ingredients you have hiding in your veggie bin of your fridge. I make this all the time in our house especially when I'm struggling with the dreaded "what's for dinner" question.
The secret ingredient in this recipe is the sauce. Just 4 simple ingredients and I promise you will never buy store bought sauce again. You probably even have these ingredients hanging out in your pantry already.

Quick & Easy Stir Fry
1 tablespoon olive oil
1/2 cup onion (died)
2 cloves garlic (minced)
1 head broccoli (chopped)
1 red bell pepper (deseeded & cut into strips)
2 cups asparagus (chopped)
2 cups sugar snap peas
1 cup mushrooms (chopped)
2 cups rice (cooked)
2 tablespoon peanut butter (sub with sun butter if allergies)
5 tablespoon tamari sauce (gluten free soy sauce)
2 tablespoon maple syrup
1 15oz can coconut milk (full fat)
• In a skillet over medium heat cook the olive oil and all the vegetables for 10-15 minutes or until desired consistency. Continuously stir to prevent burning.
• Add all sauce ingredients to a bowl and whisk together until creamy.
• Add sauce to skillet and cook with the vegetables.
• Serve stir fry over rice.
You can serve over rice, cauliflower rice or rice noodles.
You can use any vegetables that you want. I usually just clean out my fridge of any veggies that need to be used up. This dish is really so versatile that you can't go wrong with your veggie choice.
